Ingredients

• 2 tbsp butter
• 4 rashers bacon chopped
• 2 onions finely diced
• 2 stalks celery finely chopped
• 400 g mushrooms sliced
• 1 tbsp thyme leaves
• 1 tsp finely chopped rosemary
• 2 tbsp cornflour
• 1 cup white wine
• salt and freshly ground black pepper to taste
• 700-800 g chicken thighs skinless, boneless
• 2 cups self-raising flour plus extra
• 1/2 tsp salt
• 1/2 tsp fine black pepper
• 3/4 cup milk
• 1/4 cup neutral oil
• 1 egg beaten, to glaze
