• 1 lb (450g) ground beef
• 1 small onion, finely chopped (about 1 cup)

• 1 tsp (5g) ground cumin
• Salt and pepper to taste
• 2 cups (240g) shredded cheese (cheddar or a Mexican blend)
• 1 cup (240g) sour cream
• 1 egg, beaten
• 6-8 corn or flour tortillas
• 2 cups (480ml) salsa verde
• Fresh cilantro, chopped (for garnish)
