Ingredients

• 1 Tbsp/15 ml olive oil
• 3 oz/75 grams dry-cured chorizo, diced
• 1 red pepper, seeded and finely diced
• 1 medium red onion, finely diced
• Kosher salt
• 1 tsp sweet smoked paprika
• 1 (15.5oz/400 gram) can chopped tomatoes
• 4 large eggs
• 1 oz/30 grams feta cheese
• Handful of cilantro leaves
• Crusty bread, for serving
