• 1 medium onion, diced
• 1 tbsp olive oil
• 1 tbsp za’atar or dried thyme
• 3 eggs, separated
• 1 tsp kosher salt
• 1 tsp black pepper
• 1/4 cup chopped fresh parsley
• 1 medium carrot, shredded (about 1/2 cup)
