Harvest Soup by Donal Skehan - Flahavan's

Ingredients

• 2 tbsp olive oil
• 1 onion, finely diced
• 2 stalks celery, diced
• 2 sprigs thyme
• 2 garlic cloves, finely chopped
• 1 carrot, sliced
• 6 1/2 cups of vegetable stock
• 1 bay leaf
• 2 1/3 cups of potatoes, peeled and diced
• 1 tin of butter beans, drained and rinsed
• 1 1/4 cups of Flahavan’s Rolled Oats
• 3/4 cup of cavolo nero (Tuscan kale), hard stalks removed and roughly chopped
• Sea salt and freshly ground black pepper
