Ingredients: 1 jar (280g) sun-dried tomatoes; 1 cup (240ml) oil (mix of oil taken from the jar and topped up with either olive or sunflower oil); 1 cup mix from a bag of pine nuts (55g) and then topped up with blanched almonds); 1 tbsp balsamic vinegar; 1 tbsp sugar; 1 good pinch salt; 4 cloves pressed garlic (personal preference here, I am a garlic lover, but you can adjust +/- 2 cloves)
