Couscous Summer Salad – Vince & Joe’s Gourmet Markets

Ingredients

• 2 cups cherry tomatoes
• 1 bunch broccolini, chopped (about 3–4 cups)
• 4 smashed garlic cloves
• 3 garlic cloves, minced
• A drizzle of olive oil
• 1 tsp. dried thyme
• 3/4 tsp. fine grain sea salt
• 1/2 small red onion, chopped
• 1 lb. pkg. of Couscous
• Dressing
• 1/2 packed cup mint, finely chopped
• 1 packed cup parsley, finely chopped
• 1 packed cup basil, finely chopped
• Juice of 1 lemon
• 3 Tbsp. olive oil
• 3 Tbsp. tahini
• 2 Tbsp. honey
• 1/4 tsp. fine grain sea salt
