Creamy Leek & Parsnip Soup

Ingredients

• 3 tablespoons olive oil
• 3 leeks, trimmed and cut into 1/2 inch pieces (about 4 cups)
• 4 parsnips, peeled and cut into 1/2 inch pieces (about 4 cups)
• 1 small white sweet potato, peeled and cut into 1/2 inch pieces
• 2 teaspoons kosher salt
• Black pepper
• 1 bay leaf
• 1 heaping teaspoon ground turmeric
• 4 garlic cloves, minced
• 6 cups veggie stock
• Fresh lemon juice
• Parsley
