Ingredients
- 1 Onion finely diced
- 2 Cloves of garlic puréed
- 500g Parsnips cut to 1cm cubes
- 100g potatoes cut to 1cm cubes
- oil (for cooking)
- 500ml vegetable stock (1 stock cube (OXO) will do)
- salt and pepper
- 50g leek finely chopped
- 15g of croutons to serve
