• 415g can Vegie Delights™ Nutolene, mashed
• 1 tbs olive oil
• 3 garlic cloves, chopped
• 3 tsp fresh ginger, peeled & grated
• 1 tbs red Thai curry paste
• 1 tsp turmeric
• 2 tbs brown sugar
• 1 tbs salt reduced soy sauce
• 1 large red chilli, chopped
• ¼ cup fresh coriander
• ¼ cup fresh mint leaves
• 2 spring onions, sliced
• 1 lime, juiced
• 1 pack rice paper
• 1 carrot, peeled and cut into sticks
• 2 cups lettuce, shredded
• Dipping sauce of your choice
