• 1 large onion (finely chopped)

• 1 Tbsp grated fresh ginger
• 3 large carrots (peeled, roughly chopped)
• 2 medium turnips (peeled, roughly chopped)
• 1 1/2 tsp sea salt
• 1/4 tsp pepper
• 5 cups water
• 2 tsp lemon juice (freshly squeezed)
• 1/4 cup maple syrup
• 2 green onions (diced)
• 3 Tbsp sour cream or yogurt (optional)
