schnitzel sandwiches Recipe

Ingredients

• 1 cup flour
• kosher salt and ground black pepper
• 2 lg eggs
• 1/2 cup milk
• 2 cups breadcrumbs
• 2 tsp caraway, poppy,sesame or fennel seeds ( or a combination)
• 8 pork, turkey or chicken cutlets ( about 1 1/2 lbs)
• 2/3 cup olive oil
• 2 tbl unsalted butter
• 2 tbl chopped fresh parsley
• 8 pretzel rolls
• sliced pickles, sliced red onion, lettuce leaves and/or spicy brown mustard, for topping
