Gingerbread Eggnog Thumbprint Cookies – Rosanna Pansino

Ingredients

• 1 stick (4 ounces) unsalted butter, room temperature
• 1/4 cup granulated sugar
• 1/2 cup packed brown sugar
• 1/4 cup molasses
• 1 egg, room temperature
• 2 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 2 teaspoons ground ginger
• 1 1/2 teaspoons cinnamon
• 1/2 teaspoon cloves
• 1/2 teaspoon salt
• 1 1/2 tablespoons of candied ginger, finely chopped
• 1/2 cup granulated sugar, for rolling
• 4 ounces white chocolate, chopped
• 2 tablespoons eggnog
• 1/16 teaspoon rum extract (a few drops)
