Ingredients

• 1 pound lean Ground Beef
• 1 medium onion, diced
• 2-3 large russet potatoes, peeled and cut into 1" pieces
• 2 celery stalks, chopped
• 1 cup shredded carrots
• 2-3 cloves garlic, minced
• 1 teaspoon basil
• 1 teaspoon parsley
• Salt and pepper to taste
• 3 cups beef stock
• 3 tablespoons butter
• 1/4 cup flour
• 2 cups milk
• 2 cups cheddar cheese
