Chile Con Queso – McGuire's Recipes

Ingredients

• 2 Tbl unsalted butter
• 1/2 onion (diced)
• 4 cloves garlic (minced)
• 2 Tbl flour
• 1 c milk ((extra to thin if needed))
• 3 c cheddar cheese (shredded)
• 3 c Monterey Jack cheese (shredded)
• 1 can Rotel tomatoes with green chilis
• 1/2 c sour cream
• 1/4 tsp ground cumin
• 1/2 c chopped cilantro (optional)
• Salt to taste
