Mexican stew with Irish beef, kidney beans, corn and avocado - Irish Beef

Ingredients

• 600 stewing beef such as blade steak (Irish beef), at room temperature
• 3 tbsp butter
• 2 tbsp white wine vinegar
• 1 clove of garlic, chopped
• 3 large red onions, cut into half rings
• 1 tbsp ground cumin
• 1 tbsp of smoked paprika
• 1 tsp ground coriander
• 500 ml vegetable stock (homemade, from a pot or a stock cube) + extra
• 1 can of kidney beans (400 g), drained
• 2 corn cobs
• 1 ready-to-eat avocado
• 15 g fresh coriander
• 2 tbsp thick, full fat yogurt
• 1 lime, to serve
