Carisma Tuna Nicoise Salad - Mitolo Family Farms

Ingredients

• 500g Carisma potatoes, cut into bite sized pieces
• 1 Tablespoon olive oil, plus 2 tablespoons extra
• 500g Green beans, topped and tailed
• 4 Garlic cloves, thinly sliced
• 6 Anchovies, roughly chopped
• 1 Tablespoon red wine vinegar
• 2 Teaspoons Dijon mustard
• 400g Tuna fillet
• 4 large heirloom tomatoes, cut into different shapes and sizes
• 1 Baby cos lettuce, cut into wedges
• ½ Red onion, thinly sliced
• 2 Tablespoons capers
• ½ Bunch of chives, cut into batons
