Ingredients

• 1 pound ground lamb
• 1/2 pound ground pork
• 2 tablespoons minced garlic, plus 4 whole garlic cloves
• 2 tablespoons plus 1/4 cup extra-virgin olive oil
• 2 tablespoons minced fresh rosemary
• 2 tablespoons Worcestershire sauce
• 1/2 cup sun-dried tomatoes, finely chopped
• 1 pound bacon, cooked until crisp and roughly chopped
• 1 cup apple cider vinegar
• 1/2 cup sugar
• 1 tablespoon coarsely ground pepper
• 1 tablespoon pectin dissolved in 2 tablespoons water
• 3 egg yolks
• 2 tablespoons fresh lemon juice, strained
• 1/2 cup grape seed oil
• Salt, to taste
• Slider buns for serving
