Ingredients

• 1 Tbsp extra virgin olive oil
• ​​1 yellow onion, small-diced
• 2 garlic cloves, minced
• 1 jalapeño, seeds removed, small-diced
• 16 oz Velveeta cheese, cut into 2” pieces
• ½ cup whole milk
• 8 oz shredded pepper Jack cheese
• 2 Tbsp Cholula hot sauce
• 4 oz canned, diced green chiles
• 1 tomato, seeded, small-diced
• ¼ cup minced cilantro, plus more for garnish
• Kosher salt, to taste
• Freshly ground Gelson’s black pepper, to taste
• 2 green onions, thinly sliced, for garnish
• Tortilla chips, for serving
