Winter Risotto – Fustini's Oils & Vinegars

Ingredients

• 4 tablespoons Fustini's Garlic olive oil, divided
• 1 yellow onion, small dice
• 2 cups Arborio rice
• ½ cup white wine
• 2 qt vegetable stock, simmering
• 1 small winter squash, peeled, seeded, small dice
• ½ cup sliced almonds
• ¼ cup grated Parmesan, plus more to garnish
• 1 tablespoon fresh herbs (parsley, thyme)
• salt and pepper to taste
