- 1/2 cup butter
- 3 garlic cloves, chopped
- 1 small onion, chopped
- 10 ounces chopped fresh spinach (can use frozen, thawed & drained)
- 3 1/2 ounces mushrooms, roughly chopped
- 3 ounces shredded Italian cheese blend (parmesan, ramano, mozzerella)
- 1 (8 ounce) package shredded cheddar cheese
- salt and pepper
- 2 whole eggs
- 2 egg whites
- 1 cup milk
