Ingredients

  • 1 lb Perch
  • .25 cup Lemon Juice
  • .25 tsp Parsley
  • 1 tsp Soy Sauce
  • 1 cup Flour
  • 3 Egg (beaten)
  • 1 cup Bread Crumbs
  • wedge Lime (wedges)
  • Vegetable Oil (or your preferred oil for frying)
  • .25 cup Cucumber (diced)
  • .33 cup Mayonnaise
  • 2 tsp Lemon Juice
  • .125 tsp Dry Mustard
  • 2 Tbsp Parmesan Cheese
  • .25 tsp Garlic Powder
  • 2 Tbsp Green Onion
  • .5 tsp Salt
  • .625 tsp Pepper
  • In a small bowl, combine the lemon juice, salt, pepper, parsley & soy sauce. Add perch, and let marinate for 10 minutes.
  • Add oil to a deep fryer and eat oil to a high heat of 360F. If you do not have a deep fryer, you can also fry these in a frying pan with hot oil.
  • Take three disposable pie tins, in one place the flour, the next place the eggs & in the last one bread crumbs. If desired, you can season the bread crumbs with salt, pepper & parsley.
  • Bread your Perch by (in order) dipping the perch into the flour, eggs, breadcrumbs. Make sure each fillet is completed covered in breadcrumbs.
  • Drop breaded fillets into the hot oil and fry them until they float and are golden brown.
  • Mix together all Cucumber Tarter ingredients until thoroughly combined. Set aside to serve with fish.
  • Place fish & tartar on a plate and garnish with parsley & lime wedges.
