No Bake Blueberry Cheesecake - Driscolls

Ingredients

• 150g plain sweet biscuits, such as Marie biscuits
• 1 1/2 tsp ground cinnamon
• 1 tsp ground ginger
• 100g unsalted butter, melted
• 2 punnets (250g) Driscoll's blueberries
• 1 Tbsp freshly squeezed lemon juice
• 1/2 cup (110g), plus 2 tablespoons caster sugar
• 1/4 cup (60ml) cold water
• 3 tsp powdered gelatine
• 500g cream cheese, at room temperature, coarsely chopped
• 1 tsp vanilla extract
• 250g mascarpone
• 300ml pure cream, whipped to soft peaks
• 2 Tbsp caster sugar
• 2 Tbsp & 2 tsp cold water
• 1 tsp arrowroot
