Garden Pea Soup and its Bruschetta – La Classe de Cuisine

Ingredients

• 200 g fresh green peas, shelled
• 500 ml chicken broth
• 100 g heavy cream
• 15 mint leaves
• 1 shallot, peeled and coarsely cut
• Salt and freshly ground pepper
• 4 slices country bread or loaf
• 1 dl olive oil
• 100 g blanched peas
• 50 g pine nuts
• juice of 1/2 lemon
• 1 tablespoon raspberry vinegar
