- 10 g Parmesan cheese
- Half a clove of garlic, peeled
- 100 ml water
- 1 g xanthan gum (optional)
- Salt
- 100 ml virgin olive oil
- Salted anchovies with their bones
- 3 black peppercorns
- 1 bay leaf
- 12 Mozzarella balls
- Redcurrants
- 12 bamboo skewers
