Easy to make ahead of time and use whatever nuts you have on hand. Nuts are bound with a caramel sauce of sugar, glucose, butter and cream.

- 300g sweet short pastry
- 3 1/2 cups nuts, walnuts, macadamias etc...
- 1/2 cup water
- 1/2 cup liquid glucose
- 1 1/4 cups sugar
- 50g butter, chopped
- 300ml cream
