Ingredients

• 6–8 white peppercorns, lightly crushed
• 1 bay leaf
• 250 ml white wine
• 80 ml white wine vinegar
• 6 salted herring fillets, packed in oil (preferably Matje brand)
• 1 red onion, finely sliced
• 2 large white onions
• 20 ml olive oil
• 1 bunch fresh dill, finely chopped
