Brioche Buns Gelson's

Ingredients

• 2 ¾ cups King Arthur unbleached all-purpose flour
• ¼ cup nonfat dry milk
• 2 Tbsp granulated sugar
• 1 ¼ tsp kosher salt
• 1 Tbsp instant yeast
• 3 large Gelson’s eggs + 1 large egg yolk, reserving the white for egg wash
• ¼ cup plus 1 Tbsp water, divided
• 10 Tbsp unsalted butter, cut into 1” pieces, softened
• Spray oil
• 1 Tbsp Gelson’s sesame seeds
