- 2-3 tbsp Mellow Yellow Balsamic Vinegar Dressing, plus extra for drizzling
- 6 slices of bread
- 2 tbsp Mellow Yellow Rapeseed Oil
- Salt
- 125g soft goats cheese or cream cheese
- Watercress, rocket or butterhead salad
