• 250 g butter, plus extra for greasing
• 150 g dark chocolate, broken into pieces
• 350 g plain flour
• 400 g caster sugar
• 9 tbsp cocoa powder
• 2 tsp bicarbonate of soda
• 3 large eggs
• 400 ml buttermilk
• 900 g chocolate mints, (such as After Eights) broken
• 150 ml double cream
• Food colouring, blue or green
• 300 g ready rolled fondant icing
• Cornflour, for dusting
