- 4 large egg whites
- 225g white caster sugar
- 1 tsp ground ginger
- 1 tsp cornflour
- 1 tsp white wine vinegar
- ½ large pineapple peeled, cored and cut into 4-5 wedges
- 3 tbsp ginger syrup from the jar (see below), plus extra to drizzle
- 6 balls stem ginger in syrup, roughly chopped
- 500ml double cream
- 1 tbsp icing sugar plus extra for dusting handful mint leaves, shredded
