• 1 stick of unsalted butter, very cold and cut into 1-inch dice
• 1/4 cup ice-cold buttermilk

• 2 eggs separated, room temperature
• 6 tablespoons unsalted butter, room temperature
• 1 cup sugar
• 3 tablespoons flour
• 1 tablespoon lemon juice
• 1/4 teaspoon nutmeg
• 1/4 teaspoon salt
• 1 cup buttermilk, room temperature
• Powdered sugar (optional, for dusting)
