  • 1 shot brandy ((equal to 1.5 ounces brandy))
  • 1 tablespoon freshly grated ginger
  • 1/2 teaspoon kosher salt
  • 1/2 cup cold butter ((1 stick))
  • 12 ounces whole-milk ricotta cheese
  • 5 eggs (whites and yolks separated)
  • 1 3/4 teaspoons kosher salt
  • 1 teaspoon vanilla paste (or 1/2 teaspoon vanilla extract)
