Ingredients

  • 700g waxy potatoes, peeled, and cut into 1.5–2cm dice
  • 2 tbsp rapeseed or sunflower oil
  • 2 medium–large onions, finely chopped
  • 2 tsp brown mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp black onion seeds
  • 3 large garlic cloves, finely chopped
  • 4cm piece of root ginger, peeled and finely grated (to give about 15g)
  • 1 tsp ground cumin
  • 1 tbsp curry powder, or to taste
  • 1 tbsp garam masala, or to taste
  • ½ tsp chilli powder, or to taste
  • ½ tsp ground coriander
  • 1 tsp ground turmeric
  • ¼ tsp salt, or to taste
  • ground black pepper
  • 3 medium–large tomatoes
  • 100g strong white bread flour
  • 450g plain flour
  • 1½ tbsp ground turmeric
  • 75g unsalted butter, chilled and diced
  • 100g solid vegetable fat, made for baking, diced
  • ½ tsp salt
  • 1 egg, beaten, to glaze
  • 2 tbsp caster sugar
  • ½–1 medium–hot red chilli, deseeded and thinly sliced, to taste
  • 1 very large or 2 medium ripe mangoes, peeled and stoned
  • 1 tsp black onion seeds, for sprinkling
