Chunky Celeriac Soup

Ingredients

• 15 ml Tomato Purée
• 100 g Puy Lentils
• 200 ml Chicken Stock hot; vegetable stock can be used as an alternative
• 1 clove Garlic finely chopped
• 1 pinch Chilli Flakes dried
• 1 pinch Salt to taste
• 1 pinch Black Pepper freshly ground, to taste
• 1 leaf Basil fresh, to garnish
• 15 ml Olive Oil
• 0.5 piece Red Onion roughly chopped
• 150 g Celeriac peeled and cut to 2.5cm cubes
