Ingredients

• 4 tablespoons Fustini's Chipotle olive oil, divided
• 2 tablespoons freshly squeezed lime juice
• 1 tablespoon fresh lime zest
• 1 teaspoon honey
• 1/2 teaspoon cumin
• 1/2 teaspoon chili powder
• 1/2 teaspoon smoked paprika
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 2 garlic cloves, minced
• 1 red onion, thinly sliced
• 2 bell peppers, thinly sliced (any color works)
• 2 8 ounce blocks of halloumi cheese
• 12 corn or flour tortillas, for serving
• fresh cilantro, for topping
• avocado, thinly sliced, for topping
