Ingredients

• 1 ½ lbs chuck roast
• 2 tbsp extra virgin olive oil, divided
• 1 large yellow onion, sliced
• 3 large carrots, sliced ¾” thick
• 4 cloves garlic, sliced
• ⅓ cup cup tomato paste
• 1 cup dry white wine
• 1 tbsp paprika
• 1 tbsp coriander
• 1 tbsp cumin
• 1 tbsp turmeric
• 1 tbsp Dijon mustard
• 1 tbsp anchovy paste
• 1 qt chicken stock
• Parsley, to garnish
• 15 oz can white beans (like cannellini)
• Salt & Pepper
