Chicken in samfaina sauce –

Ingredients

• Chicken cut into 8 pieces - 1 and a half kg
• Olive oil - 60ml
• Brown onions, chopped - 2 large
• Eggplant, peeled and cut into 2 cm cubes - 400g
• Garlic cloves, crushed - 3
• Zucchini cut into strips - 350g
• Red peppers, cut into 1 cm strips - 2
• Chopped tomatoes - 1 tin
• Bay leaf - 1
• Sugar - 1 tsp
• Chopped herbs, such as thyme, oregano and parsley - 2 tbsp
• White wine - 125ml
