San Joaquin Battered Asparagus | What Dad Cooked
Dad's version of San Joaquin Battered Asparagus with Ranch Dip, a favourite at the Asparagus Festival in Stockton California.
Ingredients
- 8 very large asparagus
- 160ml Ranch dip – see note at top of recipe
- Grated Parmesan
- 2 litres of vegetable oil for deep frying
- For the batter (enough for 16 large spears)
- 200g plain flour
- 50g corn flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- Pepper
- 330ml can of pale ale
