• 2 lbs boneless, skinless chicken thighs
• 1 lb little potatoes, halved or quartered
• 1 1/2 cups diced tomatoes
• 3/4 cup chicken broth
• 3/4 cup light coconut milk
• 1/2 tsp salt
• 1/2 tsp ground pepper
