My Zucchini Involtini with Pumpkin Ricotta will give you all the Fall feels! It's zesty + delicious + full of Italian flavor!
Ingredients
- 1 T olive oil
- 1 lb ground turkey
- 1 1/2 C whole milk ricotta cheese, well drained
- 1/2 C pumpkin pie filling or pumpkin puree
- 1 T pizza herbs (or mix of dried oregano, basil, thyme)
- 3 large zucchini, very thinly sliced lengthwise
- 4 C marinara sauce
- 7 oz fresh mozzarella, torn
- 1 C Parmesan, grated
- sea salt
- ground pepper
- 2 T fresh oregano
- fresh basil, to serve
