Ingredients

• 1 cup flour
• ½ tsp. salt
• 1/3 cup shortening, chilled
• 3 to 6 Tbsp. ice cold water
• 7 large egg yolks
• 1 large whole egg
• 1 ½ cups sugar
• ¾ cup freshly squeezed lemon juice
• ¾ cup (1 ½ sticks) butter, cold, cut into pieces
• 4 oz. cream cheese, softened
• 1 cup heavy cream
• 1 teaspoon vanilla extract
• 1 or 2 tablespoons sugar
• Zest of a lemon or lime (optional)
• 1 ½ cups heavy cream
• ¾ cup raspberry sauce
• 2 drops lemon oil
