Turkey and Black Bean Taco Skillet - Ontario Bean Growers

Ingredients

• 2 tsp canola oil
• 1lb extra lean ground turkey
• 1 onion, chopped
• 2 red bell peppers, chopped
• 1 tbsp chili powder
• 1 tsp cumin
• ¼ tsp garlic powder
• ¼ tsp oregano
• ¼ tsp salt
• 1 cup of rice
• 1 x 19 oz can black beans, drained and rinsed
• 1 x 19 oz can diced tomatoes
• ½ cup of frozen corn kernels
• 1 cup grated cheddar or Monterey Jack cheese
• Optional toppings: sour cream, salsa, avocado, guacamole, jalapenos
