Ingredients

• 2 tablespoons vegetable oil
• 1 whole yellow onion, diced
• 2 large carrots, diced
• 5 cloves garlic, minced
• 2 whole bay leaves (optional)
• 3 medium tomatoes, chopped
• 1 pound raw brisket
• 1 can hominy, drained and rinsed to taste
• 1 can red kidney beans, drained and rinsed
• 1 can white kidney beans, drained and rinsed
• 1 large sweet potato, largely cubed
• 2 cups butternut squash, largely cubed
• 1 medium cassava, largely cubed
• 1 whole chorizo, sliced
• 1 tablespoon paprika
• 4 cups kale, chopped
• salt and pepper to taste
• water as needed
