Mingle's Spicy Mexican Quick Tacos

Ingredients

• 1 finely diced onion
• 2 garlic cloves finely diced
• 100 ml of stock (beef or vegetable)
• 1 400 g can of tomatoes 
• 1 diced capsicum half green and half red 
• 1 diced carrot 
• 500 g of beef mince or a plant based alternative 
• 1 pack of tortillas
• 1/2 bunch of chopped coriander 
• 1/2 a chopped chilli
• 1 lime
