- 1 1/2 tbsp of lemon juice
- 900g of strawberries, ripe, hulled weight
- 7 gelatine leaves
- 150ml of double cream
- 150ml of single cream
- 150ml of milk
- 1 vanilla pod, split lengthways
- 2 egg yolks
- 90g of caster sugar
