Pastitsio (Greek lasagna)

Ingredients

• 2 T. olive oil
• 1 lb. ground beef
• 1 c. chopped yellow onion
• 1 clove garlic, minced
• 1 bay leaf
• 1/2 t. dried oregano
• 1/4 c. dry red wine
• 1 14 oz. diced tomatoes
• 1/2 c. water
• 1/4 t. ground cinnamon
• 1 pinch ground cloves
• 1 pinch ground allspice
• 8 oz. bucatini (or spaghetti)
• 1/4 c. grated cheese (Parmesan, Swiss, or Manchego)
• 4 T. butter
• 5 T. all purpose flour
• 2 1/4 c. milk
• 1 pinch grated nutmeg
• 2 eggs, separated
