Ingredients

• 2 ⅕ lbs pork mince
• 1 large onion, chopped
• 2 celery sticks, chopped
• 1 tsp ground black pepper
• 2 bay leaves
• 2 fresh rosemary sprigs
• ½ tsp ground nutmeg
• ½ tsp cinnamon
• 1 ½ tbsp pure maple syrup (preferably dark syrup for its robust taste)
• 1 egg, beaten
