Meatballs in thick tomato sauce with pumpkin | Cooking with Vi

Ingredients

• 1 red onion
• 4 cloves garlic
• 300–400 g pumpkin (about half of a small pumpkin)
• 400 g tomato sauce (or 1 can of whole peeled tomatoes)
• 400 ml chicken stock
• 1 lemon
• 2 egg yolks
• 400 g ground beef (i prefer a combination of beef and pork)
• 2 tablespoons olive oil
• 1/2 teaspoon ground nutmeg
• Sea salt
• Freshly ground black pepper
