Ingredients

• 1 tbsp olive oil
• 2 large red bell peppers -- 1 diced and 1 cut into strips
• 1 large green bell pepper, diced
• 1 tbsp dry white wine
• 1 large onion, diced
• 3/4 tsp black pepper
• 1/2 tsp salt
• 1/2 tsp thyme
• 1/4 tsp nutmeg
• 1 cup water
• 1 1/4 cup frozen winter squash
• 1 1/4 cup (10 oz) fettuccine
• 1 tbsp unsalted butter
• 2 tbsp grated Parmesan cheese
